CHICKEN RENDANG

Last night I cooked chicken rendang to eat with coconut rice (nasi lemak). This is very simple rendang and easy to make.

Ingredients

  • 1 chicken, cut into small pieces
  • 1 cup coconut milk
  • 1/2 cup ‘kerisik’
  • 2 turmeric leaves
  • 3 tablespoon pounded dried chilli
  • 1 tablespoon juice of tamarind pulp

Pounded Ingredients

  • 1 1/2 large onion, chopped
  • 3 cloves garlic
  • 2 cm galangal
  • 3 cm ginger
  • 2 cm fresh turmeric
  • 3 tablespoon chopped lemon grass
Method
  • Mix chicken with pounded ingredients and chilli and cook in wok for about 15 to 20 minutes (medium flame) . Add coconut milk, turmeric leaves, ‘kerisik’, tamarind juice and season with salt and sugar. Cook until the gravy thick. Serve with rice, glutinuos rice, bread, etc
